Muffins first--then souffles

 MAKE TWO QUARTS OF MILK RATHER WARMER THAN WHEN IT COMES FROM THE COW ; THEN WITH A HORN OR WOODEN SPOON, MIX WITH IT ABOUT A TEACUPFULL OF GOOD FRESH YEAST ; STIR FLOUR INTO IT TILL IT BE THICK AS BATTER ; COVER IT AND LET IT RISE FOR AN HOUR, THEN TAKE IT OUT BY SPOONFULLS AND LET IT DROP AMONG  FLOUR AND LET IT REMAIN FIFTEEN MINUTES ; THEN TAKE THEM (MUFFINS) UP AND FLATTEN THEM A LITTLE, AND BAKE THEM ON A METAL PLATE,WHEN ONE SIDE IS A LITTLE BROWN, TURN THEM .
WHEN TO BE EATEN, TOAST THEM AND WITH A KNIFE CUT THEM A LITTLE ALL ROUND THEN PULL THEM OPEN AND BUTTER THEM WELL.


ALSO KNOWN AS "OVEN BOTTOMS" IN SOME PARTS, THEY ARE A GREAT OPTION FOR BURGERS AND FILLED WITH SMOKEY BACON AND A GIRDLED EGG MAKES A SUPER BREAKFAST!
SMOKEY BACON STRAWBERRYS AND HONEY WITH A LITTLE BLACK PEPPER IS GOOD!



STRAWBERRY SOUFFLE
You can use almost any flavouring to make a delightfully light , Crisp topped (Very impressive )  Souffle.

Separate three large eggs , Add two tabespoons of icing sugar and a teaspoon of cornflour then whisk untill softly peaking--now dont go for the full meringue hit!!  leave it a little soft.
Take your chosen fruit , Strawberrys in this case , and puree it ! Go on then -- blitz it in ya processor or whizz it with that stick blender you got for Christmas!
Make a cold sabayonne with the egg yolks--Whisk them until they show the whisk marks then whisk in the puree , This is not for everybody but I added a good pinch of coarsely ground black pepper!!
Heres a trick!
Butter the inside of the ramekin dishes , caster sugar to frost the inside! Then chill them down well! This stops the outside of the souffle from browning and leaves the top nice and crisp and even (Good old Wenceslas)
Now Add some of the yolk and fruit to the beaten whites just to get it used to the idea , Frold it in with a metal spoon . Then add the rest and frold in gently!  "frold"?? OK!
Now into the coooold ramekins
Yor oven will have heated up to 200oc while you were having that second Margarita and will be ready to accept the souffles filled to within half an inch from the top Just run a wet little finger around the edge to help it rise to the occasion! Ten minutes will probably do it , turn the heat down to 160 after five minutes. Whip em out and serve forthwith dusted with icing sugar , I stuck a spoonfull of mango ice cream into the middle!
That called for another Margarita! Hmmmmmmmm!!!
