Cake and Bread Recipes--Most are for large quantities so reduce pro rata.

BANANA BREAD. This will make 6 x 1Lb loaves
2LB SR FLOUR ; 1LB BUTTER ; 24 OZ SUGAR ; 8OZ CHERRIES ; 8OZ WALNUTS ; 8OZ BANANA ; 1LB SULTANAS ; 8 EGGS.
Beat butter sugar mashed banana and eggs until fluffy, fold in flour fruit and nuts.
Wet hand with milk and scoop the ensuing batter into lined 1lb loaf tins. Wet knuckles with milk and level the top of the mix then make an indent in the wet batter--this will stop a big "hump" in the middle of your loaf.
Bake in moderate oven until your skewer comes out clean.

FLAPJACK.
240Z ROLLED OATS ; 12 0Z BUTTER ; 1LB SOFT BROWN SUGAR ; 8OZ GOLDEN SYRUP
In a pan, melt marg and syrup together , add oats and sugar, stir together and press into a tray. bake for 20 mins at 180 c. Cut into squares while still hot.

APPLE WALNUT BREAD.
1Smaller quantities here, nice product though! heres a 2lb loaf
80z wholemeal flour, 1tsp baking powder, pinch of salt, 4 oz butter, 6 oz soft brown sugar, 2 big eggs -beaten, grared zest and juice of 1 orange, 20z chopped walnuts, A big bramley apple roughly chopped.sieve dry ingredients replacing the bran left in the sieve and beat until smooth with the eggs ,butter and orange juice. stir in the walnuts and apple, then spoon into a 2lb lined tin and bake for 1 hr @ 160oc or until skewer tests clean.
Try a little cinnamon butter on the sliced toasted bread --Great!!

LEMON DRIZZLE CAKE.

18OZ BUTTER ; 18OZ MARGARINE ; 2LB 4OZ SUGAR ; 2LB SR FLOUR ; 16 EGGS ; THE ZEST OF FOUR LEMONS.
Beat eggs sugar butter and margarine together fold in flour and lemon zest.
Juice the lemons and mix with 4oz icing sugar, have standing by in a jug .
into loaf tins and bake for 1hr at 150c---- DONT OPEN THE OVEN DOOR!!!!
When baked and still hot "Drizzle" the lemon/icing sugar mix into the top of the loaves. leave to soak and cool, Delicious!!!

STICKY TOFFEE PUDDING

Great fun great food , you can get very fat and happy eating this! So heres the stuff!
All old weights because uts an old recipe so--2oz butter ; 8oz plain flour ; 1 egg ; 1/2 pt boiling water ;1 stripped vanilla pod ; (OK! essence will do :-( ) 6 oz caster sugar 1 tspn baking powder ; 6 oz chopped dates ; 1 tspn baking powder.
TOFFEE SAUCE. (This is the killer)  1 1/2 oz butter 2 1/2  oz muscovado sugar ; 2 tblspns double cream. SAUCE. Melt butter in a pan then add the muscovado and cream then simmer for three minutes



METHOD.  Mix all dry ingredients ,add the egg, melt the butter in the water and the essence. mix the lot together, pour into a greased loaf tin or square cake tin but dont let it be too thin!! and bake for 40 mins at 180c. Cut the hot pudding into squares and cover with sauce then place under a hot grill until it bubbles---Dont burn it!!! --- A big dollop of whipped double cream will really add insult to injury! OK then? Try a little Amaretti  de sarono in the cream--mmmmmm! Better yet--A ball of vanilla ice --A shot of hot espresso and a shot of dark rum     ;0)))) I cant be responsible for what happens after that --but enjoy LOL!!

PARKIN.
Traditionally eaten on Halloween! The feast of all Hallows. Dont know why perhaps someone can tell me?
Stuff---in old weights again! sorry.  1lb s/r flour ;  1lb golden syrup ; 1/2 lb sugar ; 2 tsp ginger ; 2 tspn bi carb in a drop of milk ;
1/2 lb medium oatmeal ; 1/2 lb butter 1pt milk.
Easy mixing here! Melt syrup and butter in a pan and add to milk ,  then mix all ingredients together. into baking tin and bake 45 mins at 160c.

LARDY CAKE.
Made around the Cotswolds and Stratford --Well --the Midlands! Lardy cake is delicious but veeeeery fattening!! Anyway--M ake 2lb of white bread dough and take 6oz of lard or butter Lets go for butter eh?A handfull of currants and a tablespoon of caraway seeds finaly 6oz demarara sugar.
Roll out the dough and put haf the sliced butter and half the sugar the caraway seeds and the currants on two thirds of the dough and then fold in three like you were making puff pastry. Roll out again and do the same with the remaining butter currants caraway and sugar. rollout to fit onto a baking sheet about 2 inches thick and allow to rise in a warm place. Bake in a hot oven at 180c. When half baked brush with a heavy sugar water syrup then finish baking! I strongly recomend that you then --gobble it up!!

SALY LUNN.

1/2 lb Flour ; 1/2 oz Yeast ; 2oz butter ; 5 fl oz milk ; 1 egg a pinch of salt.
Sieve ans warm the flour and salt. Warm the milk. cream the yeast in a little of the warm milk. Make a well in the centre of the flour and pour in the creamed yeast and half the milk then set in a warm place to froth up for about twenty minutes, have a cup of cappucino or something.----Add the beaten egg and mix to a loose dough adding more milk if needed . beat well and allow to rise for 1 hour . go and have a bath----Come back and get the dough out again and knead lightly. Put it in two loaf tins and allow it to rise again for about a cappucino's worth!! brush with beaten egg and bake it at 200c for 20 mins! Cool and eat buttered!

Heres a tomato and parmesan loaf to go with  antipasto and charcuterie stuff! smells great and tastes de
lightful!!

250gm malted brown breadflour and 250gm strong white with 50gm of parmesano grano 50gm of sundried tomato , a pinch of salt , a pinch of sugar and 1/2 a packet of dried yeast. A tablespoon of olive oil. 315 mil of warm water. mix well until it looks like the picture above!!


 Knead until you get it looking like this!



warm your container and pop the dough in it to rise for 10 mins covered with oiled clingfilm.




There you go!! now knock it back and repeat the rising process once more!



Make it into a ring like a HUGE donut and dust with flour!
Then slash it a few times --not too deep now but be confident with a SHARP knife!!



Risen again!! Amen.
Now bake it at 200oc for about 20 minutes in the middle of the oven! I use a woodburner if I can with a good hardwood ember glow!



There y' go!! Someone said it looks a bit like a dogs bottom!!
No pleasing some folks eh?

So we all enjoyed a nice buttered dogs bum!! HA!!

Here's Carrot cake!!
Super recipe.
1lb caster sugar ; 8fl oz vegetable oil ; 4 eggs ; 8oz finely grated carrots ; 8oz plain flour ; 1 1/2 tsp bicarb ; 1 1/2 tsps baking powder ; 1 tsp allspice ; 1 tsp ground cinnamon ;
Combine the caster sugar , oil and eggs and beat together for abt a minute.
mix in the sifted dry ingredients and add a bit more carrot because the others will be bashed up!
and mix it all together.


Grease your tin and put the mixture into it
and bake it in a moderate oven for about 35 minutes
Turn out and cool on a cooling wire.


Now The icing!
8oz of marscapone (or soft cheese like Philly or similar)
2oz  butter ; vanilla , or essence. 8 oz icing sugar.
Whip it to peaking!

Spread with the icing and add crushed nuts --in this case pistachios.
Crystallised ginger to add a bit of fire and there you go!!!!
Love it.

Easter cake with a Devils food cake theme

2oz unsweetened cocoa powder ; 6 fl ox boiling water ; 6 oz butter at room temp ; 12 oz dark brown sugar ; 3 room temp eggs ; 10 oz plain flour ; 1 1/2 tsps bicarb ; 1/4 tsp baking powder ; 4 fl oz soured cream .

Pre heat your oven tp 180 o  and line 2 9 inch tins.
Mix the cocoa and water and set to cool , cream the butter and sugar till light then add the eggs one at a time. Add the warm cocoa /water mix to the batter, fold the sifted flour and powders into the batter in two batches alternating with the soured cream.
Tin it up and bake until the cake leaves the sides of the tin.
Cool on wire racks!
Decorate with chocolate fudge or cream !
Try it with coffee ice cream--Super!!
