KING SCALLOPS
These Scallops on the half shell were from Ireland where they were diver caught and shipped to the markets here overnight. ?They were literally still twitching when I floured them for flash frying A couple of bacon rashers and some sauce Choron would finish them off nicely too!
Choron--Take four egg yolks and beat them with a wooden whisk over a bowl of warm water to make a sabayon with a few drops of lemon juice, whisk in half a pound of melted butter with the salt separated and a few blades of chopped tarragon make a reduction with a chopped shallot in a tablespoon of taragon vinegar then add chopped tomato flesh and a tablespoon of tomato puree mix well adjust the seasoning and nap the warm scallops with this delicious sauce.
A creamy and delicious fish pie with Salmon , King prawns , Smoked cod Onion and Parsley. That's it!
Skin , pin bone and dice the fish and mix with the king prawns.
Poach in milk and season with sea salt and white pepper. Thicken with a little blond roux or cornflour.
Pour into ovenproof dish and allow to set for a while.
Make mashed potato with a little cream and an egg beaten in and well mashed. Put in a piping bag. then pipe onto the fish mixture!
Bake in the middle of a 180c oven till browning!
Get a big spoon serve it out and eat it!!
You could spread the potato out with a pallette knife and sprinkle with grated cheese then grill it!
Put some poached eggs on top brushed with melted butter!!

Seafood dishes needing no explainations
Skewered Tiger prawns. Use a pungent garlic oil to dip them in before grilling.
Maybe a little sesame oil with a teaspoon of thai green curry past shaken through it to brush over them before popping on the fire!
The "Sea" smell is unique when these are grilling!
A real delight! Keep it simple and let the lovely fresh produce be the star of the show!!
